Chicken Skewers with Pineapple

700 g Meat, chicken, breasts

1 can Pineapple, compote

2 piece Bell pepper, yellow, fresh

200 ml Tomato, concentrate

60 ml Soy sauce, shoyu

50 g Sugar, brown

Steps

Rinse the chicken breasts under running water and dry them with paper towels. Drain the pineapple from the can (reserve the juice) and cut the rings into bite-sized pieces. Peel the garlic and finely chop it. First, cut the chicken breasts into 2 cm thick strips, then cut them into bite-sized pieces. Season the meat with salt and pepper. Wash the bell pepper and cut it in half. Remove the stem and seeds, then cut it into smaller pieces.

Prepare the sauce. In a bowl, mix ketchup, soy sauce, honey, mustard, brown sugar, chopped garlic, and lemon juice. Place the bowl on the stove and cook the sauce over low heat for 20 minutes, stirring frequently.

While the sauce is cooking, alternately thread the chicken, pineapple, and bell pepper onto wooden skewers. To make skewering easier, slightly moisten the skewers. After 20 minutes of cooking, remove the bowl from the heat and let the sauce cool. Use half of the prepared sauce to brush the skewers. Use a brush for this.

Place a grill pan on the stove and heat it well. Pour oil into the pan and spread it evenly. Wait a few seconds for the oil to heat up, then place a few skewers in the pan at the same time. Cook the skewers for 8 minutes, turning them 4 times during cooking to ensure they are evenly browned on all sides. Repeat the process until all skewers are cooked.

Place the cooked skewers on a serving plate and serve the remaining sauce on the side. Serve the prepared dish.

Advice
Instead of canned pineapple, you can also use fresh pineapple. The skewers can also be baked on a grill, which should be well heated and greased with oil.
