Thoroughly wash the meat and pat it dry with a kitchen towel. Pound it with the smooth side of a meat mallet. Thoroughly wash the lemon and grate the zest. Then cut it in half and squeeze out the juice. Mix a teaspoon of grated zest with 1 tablespoon of oil. Season the meat to taste with salt and pepper, coat it with the lemon oil, and wrap it in transparent foil. Light the charcoal.

Thoroughly wash the young arugula under running water and dry it. Arrange it on plates. Heat the grill grate well and oil it. Cook the meat at high temperature, 5 minutes on each side. Mix the remaining lemon juice in a bowl with salt, pepper, and olive oil. Place the cooked meat on the salad, drizzle with the prepared juice, and serve immediately.
