Chicken Soup with Spinach

Ingredients

700 g Meat, turkey, breasts

2 l Water

4 pieces Potatoes, white

5 pieces Carrot, fresh

2 piece Onion, raw

5 spoon Oil, olive

1 teaspoon Salt, table

1 pinch Spices, pepper, black

1 spoon Tomato, concentrate

200 g Spinach, raw
Steps

Rinse the chicken breasts and pat them dry with a paper towel. Peel and chop the onion. Add oil to a larger pot, toss in the onion, and lightly sauté until softened. Add the meat and pour in water. Once the soup boils, skim off the foam with a ladle and reduce the heat.

Wash, peel, and slice the carrots into rounds. Peel the potatoes, wash them, and cut them into smaller pieces. Add the carrot rounds to the soup, season with salt and pepper, and cook uncovered for 30 minutes. After 30 minutes, remove the meat from the pot, place it on a cutting board, and shred it into smaller pieces using a fork or knife. Return the meat to the soup, add one tablespoon of tomato paste and the potatoes, and cook for another 25 minutes. Skim off any foam that forms on the surface.

Wash and chop the fresh spinach, adding it to the soup right at the end of cooking, as it should not cook for more than 5 minutes. Taste the soup and adjust the seasoning if needed. Serve hot, accompanied by a slice of homemade bread.

Advice
Parsley and garlic also pair excellently with this soup. Add the parsley towards the end of cooking to retain its full flavor, while the garlic can be added at the beginning. You can leave the garlic in chunks or chop it finely.
