Wash the chicken breasts, dry them thoroughly with paper towels, and cut them into strips about 0.5 cm wide. Place the strips in a large bowl and add lime zest, lime juice, chili powder, salt, pepper, and a little oil. Mix everything well and let the chicken marinate for 15 to 20 minutes.

Clean the bell pepper (remove the stem and seeds), wash it, and cut it into small pieces. Heat a little oil in a large pan and quickly sauté the marinated chicken and bell pepper.

Cut the tortillas into four pieces to create smaller triangles (one tortilla yields four triangles). Arrange the triangles on a clean work surface. Spoon a little of the sautéed chicken and bell pepper onto the rounded edge of each triangle. Sprinkle some cheese on top, then carefully roll the triangles into rolls, securing them in the middle with toothpicks (to prevent them from opening during frying).

Heat oil in a large pot and fry the chicken taquitos in batches until golden brown. Use a slotted spoon to remove the fried rolls and place them on a plate lined with paper towels. Let the excess oil drain.

When serving the taquitos on plates, you can remove the toothpicks. If the rolls are long, you can cut them in half if desired. Serve the taquitos with sour cream and various dips and salsas.
