Chicken Thighs in Creamy Sauce with Mushrooms and Spinach
An excellent dish that can be served with various side dishes. It is prepared in one pan, so you wont have much trouble with washing dishes.

Ingredients

1.5 spoons Oil, vegetable oil, canola

pieces Meat, chicken, loaves

1 spoon Butter, unsalted

350 g Mushrooms, mushrooms, fresh

250 ml Soup base, chicken, cube

250 ml Sweet cream

50 g Cheese, Parmesan, grated

150 g Spinach, raw

pieces Juice, lemon

Clean the mushrooms and rinse them quickly under running water if necessary to remove any remaining dirt. Dry them with paper towels, then slice them. Clean the spinach, wash and dry it, peel the garlic, and finely chop it.

Season the chicken thighs on both sides with salt and ground pepper. Place a larger pan on the stove and heat it well, then add oil. Once the fat is hot, place the seasoned thighs in the pan and sear them well on both sides (about 5 minutes per side).

Remove the seared meat from the pan and keep it warm on a plate. Leave only a tablespoon of fat in the pan and discard the rest. Add butter, and once it melts, add the mushrooms. Sauté them while stirring until they soften and change color. Season the sautéed mushrooms with chopped garlic, salt, and pepper.

Pour in the broth and cream. Add grated Parmesan and stir well with a spatula, also scraping the bottom to release all the caramelized bits that formed during the searing of the meat and mushrooms. Once the cheese melts, mix in the spinach and wait for it to wilt and soften.

Return the seared chicken pieces to the pan. Let everything cook for another 10 minutes or until the chicken is cooked through. If needed, add a bit more water or broth, and adjust the seasoning if necessary. At the end, optionally add a bit of lemon juice to refresh the sauce.
