Chicken Thighs in Mushroom Sauce
Special side dishes are not really necessary for this meal. It will be best served as in French bistros: with a fresh baguette, which we will surely enjoy dipping into the delicious sauce.

Ingredients

2 spoons Oil, olive

25 g Butter, unsalted

4 pieces Meat, chicken, thighs

1 piece Onion, raw

3 pods Garlic, fresh

250 g Mushrooms, mushrooms, fresh

225 ml Alcohol, Wine, Red

200 g Tomato, pieces - can

5 twig Thyme, fresh

500 ml Soup base, chicken, cube

0.75 teaspoons Salt, table

0.25 teaspoons Spices, pepper, black
Steps

Wash the chicken thighs and dry them well with paper towels. Season them with pepper and salt. Peel the garlic and onion, and finely chop them. Clean the mushrooms with a damp cloth and slice them.

In a large pot with a thick bottom, heat the oil and half of the butter. Sear the seasoned chicken thighs in the hot fat. Cook them for about 5 minutes on each side until they are nicely golden brown. Remove the seared thighs from the pot and keep them warm on a plate.

Add the remaining butter to the pot and wait for it to melt. Then add the onion and sauté it for 5 minutes, stirring until it softens. Add the garlic and sauté it with the onion just until fragrant (about 1 minute). Next, add the mushrooms and sauté them for 2 minutes, then pour in the wine. Add the diced tomatoes and let the sauce come to a boil. Reduce the heat and cook for 5 minutes to let most of the wine evaporate. Add the chicken thighs, thyme, and chicken stock. Season with pepper and salt, cover the pot, and let the dish simmer gently for about 1 hour.

After one hour, remove the chicken thighs from the pot and keep them warm on a plate. Increase the heat and cook the sauce at a strong simmer for another 10 minutes to thicken it appropriately.

Serve the chicken thighs on plates, pour the sauce over them, and serve with your chosen side dish.

Advice
Instead of champignons, you can use porcini mushrooms, and the diced tomatoes can be replaced with 2 tablespoons of tomato paste.
