Chicken Thighs with Herb Sauce

30 g Butter, unsalted

1 pod Garlic, fresh

pieces Rosemary, fresh

2 piece Meat, chicken, thighs

200 ml Alcohol, Wine, White

pieces Soup base, chicken, cube

Wash the chicken thighs and dry them thoroughly with paper towels. Lightly season them with pepper and salt. Rinse the herbs under running water if necessary and shake them dry (or pat dry). Remove the leaves from the stems and finely chop them. Peel and crush the garlic.

Sauté the crushed garlic clove in melted butter. Remove the clove and add the chopped herbs to the butter. Place the seasoned chicken thighs in the pan and brown them nicely on both sides.

Pour in the white wine and use a spatula to scrape the bottom of the pan well to remove all the caramelized bits that formed during the browning of the meat. Cover the pan and simmer the chicken for 10 minutes. Then cook uncovered until all the alcohol evaporates.

Once all the alcohol has evaporated, add enough hot broth to the pan to submerge the thighs halfway. Cover the pan again and simmer the thighs over moderate heat for another 20 minutes. Turn them once or twice during cooking. Serve the prepared dish with your chosen side.
