Chicken Thighs with Lemon and Rosemary

Preheat the oven to broil. Rinse the chicken thighs under running water and thoroughly dry them with paper towels. If desired, make a few cuts with a knife in several places so the meat cooks faster and absorbs more of the marinade's flavor. Season the thighs with salt and pepper and place them in a baking dish (skin side down). In a bowl, mix the lemon juice, olive oil, rosemary, and garlic. Brush about 1/3 of the prepared marinade over the chicken (use a brush for this). Place the seasoned thighs in the oven, about 10 to 15 cm away from the broiler. Bake for 7 minutes or until they are nicely golden brown.

Remove the baking dish from the oven and flip the thighs using tongs so the skin side is facing up. Brush another 1/3 of the prepared marinade over the top and broil for 7 minutes.

Turn off the broiler and preheat the oven to 230°C. Remove the baking dish from the oven and brush the chicken with the remaining marinade. Bake for another 10 to 15 minutes or until the meat near the bone is no longer pink. Serve the baked thighs with your chosen side dish.

Advice
The chicken can also be marinated before baking. In this case, place it in a baking dish, pour the marinade over it, and store it in the refrigerator for a few hours.
