Chicken Thighs with Onion Marmalade

850 g Meat, chicken, loaves

4 spoon Alcohol, Dessert wine

2 piece Onion, raw

125 ml Alcohol, Wine, Red

1 spoon Vinegar, red wine

1.5 spoons Honey

4 spoon Oil, vegetable oil, canola

Wash the chicken thighs, cut them (into thighs and drumsticks), dry them well, and place them in a plastic bag. Add 2 tablespoons of sherry, flour, breadcrumbs, salt, and pepper. Close the bag and shake it several times to mix the contents thoroughly. Store the bag with the chicken in the refrigerator for at least 30 minutes. Turn the bag several times while marinating.

Preheat the oven to 220°C. Arrange the seasoned pieces of meat on a greased baking dish. Place the dish in the preheated oven for 12 to 15 minutes. After 15 minutes, reduce the oven temperature to 200°C, turn the meat, and bake for another 15 minutes. Remove the dish from the oven and check if the meat near the bone is white. If it is still slightly pink, return the dish to the oven for a few more minutes.

While the meat is baking, prepare the onion marmalade. Peel the onion, wash it, cut it in half, and slice it thinly. Place the sliced onion in a bowl and add wine, vinegar, honey, and 2 pinches of salt. Mix well. Heat a saucepan on the stove, add the seasoned onion, and cook over medium heat until the onion softens and the liquid reduces. Remove the saucepan from the heat and stir in the last tablespoon of sherry.

Arrange the meat on a warm plate, top with the onion marmalade, and drizzle with the sauce that has collected in the baking dish. Serve with your chosen side dish.
