Chicken Thighs with Potatoes
Delicious roasted chicken thighs with boiled potatoes are a classic dish. To keep the meal simple, we dont overdo it with spices, but use basic ones like pepper, salt, parsley, and a bit of ground red paprika.

Wash the chicken thighs and dry them with a paper towel. Preheat the oven to 180 degrees Celsius. Pour olive oil into a deep baking dish and spread it around. Rub the thighs with salt, ground red paprika, and pepper, place them in the baking dish, and bake in the oven for 40 minutes. While baking, baste the thighs several times with the juice that accumulates in the dish.

Meanwhile, peel the potatoes and wash them thoroughly. Place the washed potatoes in a pot, cover with cold water, add salt (half a teaspoon), and cook over moderate heat for 30 minutes. Drain the cooked potatoes well.

Arrange the roasted thighs on plates and add the boiled potatoes. Drizzle everything with the sauce that has accumulated in the baking dish. Rinse fresh parsley under running water, shake it well, and chop it finely. Sprinkle the parsley over the potatoes and thighs, and serve the dish.
