Chicken Thighs with Potatoes and Tomatoes
Oven-baked chicken thighs with roasted vegetables are a great idea for a tasty homemade lunch, served directly in the baking dish used for preparation. Since the oven does most of the work, its also a perfect idea for those days when you dont feel like cooking.

2.5 spoons Oil, olive

800 g Potatoes, white

4 pods Garlic, fresh

2 twigs Rosemary, fresh

8 pieces Meat, chicken, loaves

0.25 teaspoons Spices, pepper, black

Preheat the oven to 190 degrees Celsius. Rinse the chicken thighs under running water and dry them thoroughly with paper towels. Season them with pepper and salt.

Grease a large deep baking dish with oil. Thoroughly wash the potatoes and, if necessary, scrub them (do not remove the skins!). Remove any eyes, green, or damaged parts, then cut the potatoes in half (larger potatoes can be quartered, while smaller ones can be left whole). Crush the garlic cloves with the flat side of a knife, leaving them in their skins.

Place the potatoes in the greased baking dish and season with salt (and pepper if desired). Drizzle with a little olive oil, mix well, and spread evenly in the dish. Add the crushed garlic cloves and a bit of fresh rosemary, then arrange the seasoned chicken thighs over the potatoes. Place the dish in the preheated oven for 20 minutes.

Wash the cherry tomatoes and cut them into halves. Peel the onion and slice it thinly. After 20 minutes, remove the dish from the oven and add the cherry tomatoes and onion. Flip the chicken thighs, then return the dish to the oven for another 15 to 20 minutes, until the chicken and potatoes are nicely crispy and golden.

Serve the prepared dish directly in the baking dish it was cooked in. A large bowl of seasonal salad pairs wonderfully alongside.
