In a bowl, prepare a marinade using baking soda, starch, and sake. Place the chicken meat in the marinade, mix well, and let it sit for 20 minutes. Rinse the marinated meat thoroughly and dry it with a paper towel. Cut the meat into strips or cubes of your desired size.

Wash and deseed the bell peppers, then cut them into squares. Peel the ginger and slice it into 5 thin pieces. Peel the onion and finely chop it. Place the vegetables in a bowl and add the chicken meat. Mix everything with your fingers and add the remaining sauce ingredients. Mix everything together again.

Place a wok with oil on the heat and let it get very hot. Take the chicken meat from the bowl and fry it in the wok on all sides. Once it turns golden brown, remove it from the wok with a slotted spoon and place it on a plate. Add the vegetables and sauce to the wok and quickly stir-fry the vegetables while constantly stirring. When the bell peppers become fragrant, add the chicken back to the wok. Fry for another 10 minutes, then add the cashew nuts, remove from heat, and serve with rice.
