Ingredients

1.5 kg Meat, chicken, thighs

4 teaspoon Spices, cardamom

Steps

Peel the garlic and finely chop it, peel the ginger and cut it into small pieces. In a bowl, mix together garam masala, ginger, garlic, and salt, add oil and whisk into a paste. Wash the meat thoroughly under running water and dry it with a paper towel. Push your fingers under the chicken skin on the breasts and thighs to separate it from the meat, but be careful not to tear it. Push the spice paste under the skin with your fingers and rub it all over the chicken.

Wait 2-3 hours for the flavors to penetrate the meat. Then preheat the oven to 190 degrees Celsius. Use a larger pan with a thick bottom and heat the oil well in it. Place the chicken in the pan, lay it on its side, and cover the pan with a lid. Put the chicken in the oven for 30 minutes, then turn it to the other side and bake it covered for another 30 minutes.

Place the baked chicken on its back, pour the juice from the pan over it, and bake it uncovered for another 10-15 minutes until it browns nicely. Finally, cut the baked chicken into pieces, pour the juice from the pan over it, and serve it to your guests with a side dish.

Advice
The pan must be just the right size for the chicken and must withstand the oven temperature. When we take the chicken out of the oven, we pierce the thickest part of the thigh. If clear juice runs out, it is a sign that the chicken is cooked. We can serve it with yogurt and herb dressing.
