Chicken with Peanuts and Chili

In a bowl, mix sugar, soy sauce, and cornstarch. Wash the chicken breasts, dry them, and cut them into bite-sized pieces, then toss them into the bowl with the marinade. Mix the ingredients in the bowl well.

In another bowl, mix the ingredients for the sauce: sugar, vinegar, soy sauce, cornstarch, and chicken stock.

Peel and finely chop the garlic. Clean and wash the spring onion. Finely chop the white part and slice the green part into rings. Finely chop one chili. Place a wok on the stove and heat it well over high heat. Pour oil into the heated wok and wait for it to heat up.

In the hot oil, quickly fry the whole chilies first. Then add the marinated chicken pieces and stir-fry them for 1 minute. Once the chicken pieces are evenly fried, add the chopped spring onion and garlic, ginger, rice wine, and chopped chili. Stir-fry everything together for another 1 to 2 minutes, then slowly pour in the sauce. Stir to ensure the sauce binds well with the ingredients. Finally, add the peanuts and the green part of the spring onion, then serve the prepared dish.
