Chicken with Potatoes and Tomatoes in the Oven
Chicken meat is very juicy and flavorful, as it is marinated in a wonderful lemon marinade before baking. When baked together with cherry tomatoes, onion, and potatoes, we get an excellent dish that doesnt take much time to prepare, as the oven does most of the work.

Marinade

1 kg Meat, chicken, loaves

250 g Tomato, red

In a large bowl, mix lemon juice, mustard, finely chopped garlic, olive oil, and spices. Add the chicken pieces to the prepared marinade. Mix well so that the meat is evenly seasoned. If we have time, we can store the bowl with the chicken in the refrigerator for a few hours (preferably overnight) to allow the meat to absorb all the flavors. If we don't have time, we can proceed with preparing the dish.

Wash the potatoes thoroughly under running water and cut them into quarters. Peel the onion and cut it in half. Slice both halves into thick pieces.

Preheat the oven to 180 degrees Celsius. Add the potatoes and onion to the baking dish. Season with salt and drizzle with a little oil. Mix well so that the vegetables are evenly seasoned and coated with oil, then spread them evenly in the baking dish. Place the marinated chicken pieces on top of the vegetables. Pour the remaining marinade over the vegetables. Place the baking dish in the preheated oven for 20 minutes.

After 20 minutes of baking, remove the dish from the oven and add the washed cherry tomatoes. Drizzle everything with a little more olive oil and season with ground pepper if desired. Return the dish to the preheated oven and bake for another 35 to 40 minutes, or until the skin is nicely browned and the meat is cooked through.

Serve the prepared dish with a bowl of salad.
