Chicken with Spicy Stuffing
Deboning, stuffing, and roasting a chicken in the oven may seem like a daunting task at first glance, but with a little patience, even beginner cooks can succeed. Just make sure to allocate enough time.

50 g Millet, raw

1 piece Bell pepper, red, fresh

500 g Meat, beef, ground

1 spoon Spices, mayonnaise, dried

1 bouquet Thyme, fresh

1 bouquet Parsley, fresh

1 pinch Spices, pepper, red or cayenne

6 spoon Soy sauce, shoyu, less salt

1 teaspoon Honey

5 drops Oil, sesame
Steps

Soak the millet in a bowl of warm water for one hour, then drain it in a sieve. Wash the bell pepper, cut it in half, remove the seeds and white parts, and dice it into small cubes. Peel the onion and finely chop it. Strip the thyme leaves, wash the parsley, dry it, and finely chop it.

Preheat the oven to 200 °C. Mix the ground meat with the millet, bell pepper, onion, herbs, egg, spices, and four tablespoons of soy sauce. Remove the bones from the chicken: using a narrow, sharp, and thin knife, make cuts in the meat close to the bones of the body and back, and carefully peel the meat away. Remove the body bones in one piece. Stuff the chicken with the seasoned ground meat, but not too much. Secure the opening with toothpicks.

Mix the remaining soy sauce with honey and sesame oil. Brush this mixture over the outside of the chicken. Tie the chicken legs together. Place the chicken in a greased ovenproof dish. Put it in the preheated oven and roast for about 1.5 hours. Baste the chicken several times with the juices that collect in the dish. Slice the roasted chicken, arrange the pieces on a serving platter, and serve with the remaining roasting juices.

Advice
You can stuff the chicken without deboning it; in this case, you will need less stuffing, and the chicken wont garner as much enthusiasm from your guests. When calculating the roasting time, keep in mind that 1 kg of chicken should be roasted for between 45 minutes and one hour.
