Chicken with Tomatoes and Olives
Chicken in a flavorful tomato sauce with olives is one of the classic dishes of Italian cuisine. Cooked polenta pairs excellently with this dish, and you can enrich it with grated Parmesan if desired. If polenta isnt to your liking, choose another side dish. You certainly wont go wrong with potatoes or rice.

Ingredients

2.5 spoons Oil, olive

1 piece Onion, raw

3 pods Garlic, fresh

1.4 kg Meat, chicken, thighs

150 ml Alcohol, Wine, White

600 g Tomato, pieces - can

175 ml Soup base, chicken, cube

80 g Olives, black, in brine

1 piece Spices, bay (leaves)

0.5 twigs Rosemary, fresh

0.75 teaspoons Salt, table

3 pinch Spices, pepper, black

Preheat the oven to 160 degrees Celsius. Peel the onion and garlic, then finely chop them separately. Rinse the chicken pieces under running water and dry them thoroughly with paper towels. Strip the leaves from the rosemary sprig.

Place a large pan on the stove and heat the olive oil. Add the chopped onion and sauté it, stirring occasionally, until translucent. Then add the garlic and cook it together with the onion for one minute, stirring. Transfer the contents of the pan to a plate, then return the pan to the stove and increase the heat slightly. Sear the chicken pieces on all sides in the hot pan. Remove the seared chicken pieces from the pan and set them aside on a plate.

Pour the wine into the pan and use a spatula to scrape the bottom well, loosening all the caramelized bits that formed during the searing of the meat. When about half of the wine has evaporated, add the peeled tomatoes and broth to the pan. Add the bay leaf, sautéed onion and garlic, olives, and rosemary. Season with pepper and salt, mix well, and remove from heat.

Arrange the seared chicken pieces in a deep baking dish. Pour the tomato sauce over them, then place the dish in the preheated oven for 30 to 40 minutes. Add more liquid (water or broth) during baking if needed.

Taste the prepared dish and adjust the seasoning with salt or pepper if desired. Serve it directly in the baking dish it was cooked in, alongside your chosen side dish.
