Chili con carne
This spicy dish comes from Texas in the USA and is traditionally made with beans, beef, and tomatoes. Beef has been used from the beginning because it was financially accessible due to widespread cattle farming.

500 g Tomato, red

2 teaspoons Tomato sauce, without salt

1 can Beans, grains, cooked
Steps

Wash the beef and dry it with a paper towel. Cut it into larger pieces. Peel and finely chop the garlic and onion, and blanch the tomato in boiling water for one minute. Cool the tomato, peel it, and cut it into small pieces.

Preheat the oven to 160°C. Heat oil in a large pan and sear the meat pieces. Once the meat changes color, season it with salt and pepper. Remove the pan from the heat and transfer the contents to an ovenproof dish. Add broth if needed. Add a bay leaf to the dish.

Add a little more oil to the pan and sauté the onion over moderate heat for five minutes, stirring occasionally. Mix in chili powder, ground cumin, ground coriander, oregano, garlic, tomato pieces, and tomato paste. After five minutes of stirring, pour the mixture over the meat in the ovenproof dish. Cover the dish with a lid and place it in the preheated oven for about an hour (the meat should become tender).

After an hour of cooking, remove the dish from the oven and add the rinsed canned beans. Cover, return to the oven, and cook for another 15 minutes.

Serve the prepared dish in deep bowls and enjoy.

Advice
Serve with fresh bell peppers and tomatoes or a seasonal salad. You can also add a can of corn, sliced bell peppers, Tabasco, paprika powder… Chili con carne can also be prepared with ground meat, or use a mix of ground meat and diced meat.
