Chili Dipping Sauce
A sauce served with almost every Vietnamese dish. However, it is made differently in almost every region. In the northern parts of Vietnam, this sauce is often just a simple fish sauce (nuoc mam), mixed with water and chopped chilies. In the southern regions, they also add garlic, sugar, and lime juice.

Ingredients

1 piece Lime, fresh

3 spoons Fish sauce

2 spoons Sugar, white

3 spoons Water

1 piece Chili peppers, red chili, fresh

1 pod Garlic, fresh
Steps
- Cut the lime in half and squeeze out the juice. Thoroughly wash the chili and chop it finely along with the seeds. Peel the garlic, crush it, and chop it finely. Put all the liquids and sugar in a bowl and mix until the sugar dissolves. Then add the chili and garlic. Mix well, serve in a serving bowl, and offer it to your guests.

Advice
You can also add peeled and finely chopped ginger to the sauce. Fish sauce can be replaced with soy sauce, but you must reduce the amount of sugar to one tablespoon.
