Chili with Chicken and Beans
An excellent idea for a weekday meal that wont require much time in the kitchen. You also wont need to worry about side dishes, as the chili is great just with a piece of bread. We suggest cornbread, but you can choose another type if you prefer.

2 spoons Oil, olive

1 piece Onion, raw

pieces Chili peppers, green chili, fresh

500 g Meat, chicken, breasts

1 teaspoon Spices, paprika

400 g Tomato sauce, without salt

2 cans Beans, grains, cooked

1 cup Corn, yellow, fresh

Steps

Peel the onion and garlic, then finely chop them separately. Remove the seeds from the chili and cut it into pieces, and dice the celery. Drain the beans from the can, rinse them under running water, and drain well. Wash the chicken breasts, dry them thoroughly with paper towels, and cut them into pieces.

Place a pot on the stove, pour in olive oil, and heat it. Add the onion and sauté it over medium heat until translucent. Add the chili, garlic, and celery, and sauté the vegetables for 2 minutes while stirring.

Add the chicken pieces and spices to the pot. Stir and cook for another 3 minutes until the chicken changes color, then pour in the tomato puree. Stir in the beans and corn, and bring everything to a boil. Reduce the heat, cover the pot, and let the chili simmer slowly for 15 minutes or until the vegetables soften and the sauce thickens.

Taste the chili and adjust the seasoning if needed. Serve it in bowls, sprinkle with chopped cilantro, and accompany with bread or corn tortilla chips.
