Ingredients

1 piece Melon

1 spoon Lemon zest, fresh

90 g Powdered sugar

250 ml Alcohol, Wine, White

250 ml Juice, orange

2 twigs Mint

Cut the melon in half and remove the seeds with a spoon. Then slice the melon and remove the peel. Cut the flesh into smaller pieces. Grate the lemon zest, which should amount to about one tablespoon.

Place a small pot on the stove and add the wine and sugar, waiting for the mixture to boil. Stir continuously to ensure the sugar dissolves completely. Let the liquid simmer for about five more minutes.

Then remove the pot from the heat and mix in the lemon zest. Place the melon pieces in a blender and blend into a thick puree, then mix in the wine syrup.

Pour the mixture into a larger bowl and add the orange juice. Cover the bowl and refrigerate for at least 3 hours. Wash, dry, and pluck the mint leaves. Once the soup is sufficiently chilled, serve it in appropriate bowls and garnish with mint leaves.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
