Chilli con Papp
My friend Sašo Papp is a great guy, and his chilli con carne is a fantastic one-pot dish. Just the right amount of spiciness to make you a bit thirsty, which is usually not a problem in Papps company. “We’ve never left without having another drink,” he’ll tell you when you meet. That’s how it was at the musicians picnic where we prepared this chilli according to his recipe. I’m sharing it with you exactly as he wrote it, my always entertaining friend.

1 kg Onion, raw

1 kg Meat, beef, side

0.5 piece Garlic, fresh

3 pieces Bell pepper, red, fresh

1 can Tomato, pieces - can

pieces Soup base, beef, cube

1 can Beans, grains, cooked

pieces Chili peppers, red chili, dried

pieces chocolate, dark

1 teaspoon Spices, paprika

0.5 teaspoons Spices, cumin seeds

2 spoons Sour cream
Steps

Preparation: - chop the onion into small pieces, - cut the tomatoes in half and clean them, - cut the peppers into pieces and clean them, - wash the beef and cut it into cubes, - peel and mince the garlic.

Cooking: Sauté the chopped onion in oil until it colors, but be careful not to burn it! Add the minced garlic and the cubed meat to the onion. Slowly fry and stir occasionally to ensure the meat is nicely browned (10-15 minutes), then add the chopped peppers and tomatoes along with the spices.

Once everything in the pot is bubbling happily, pour in the tomato puree and cook on low heat for at least a good hour. Add beef broth if needed.

Just before finishing, add the beans and chopped chillies, from which we’ve removed the seeds. The amount depends on your desired level of spiciness. Cook for at least another 20 minutes on low heat or until the meat is tender. Make sure to check all types of meat we’ve added to the dish, as some pieces may need a bit more time. Finally, melt the chocolate in the pot, season with salt and pepper, and serve with a dollop of sour cream on top.

Advice
If we have enough time and want to really impress our guests, we can first grill the peppers and tomatoes (on wood) and then cut them into small pieces.
