Chinese Pancakes
A slightly different way of preparing pancakes, which are traditionally served with Peking duck in China. Surprise your guests and offer them a Chinese platter with sliced Peking duck, pancakes, and hoisin sauce.

Ingredients

250 g Wheat flour, white, multi-purpose

2 dl Water

4 spoon Oil, sesame

Sift the flour into a large bowl, pour in boiling water, and mix or knead until you get a smooth dough that does not stick to your hands or the bowl. Cover the dough with a kitchen towel and let it rest for 30 minutes.

Take the dough out of the bowl and knead it well for 5 minutes. Roll it into a long log with your hands and cut it into 18 equal pieces. Shape the pieces into balls.

Pour sesame oil into a bowl and place a pan on the stove. Take two balls of dough, dip half of one ball into the oil, and press the two balls together with the oiled part. Flatten the balls with your palms to form two connected pancakes, about 15 cm in diameter. Place the double pancake in the heated pan and cook until golden brown on both sides.

When you remove the pancakes from the pan, separate the stuck halves - this will give you 18 small pancakes. To prevent the cooked pancakes from drying out while cooking the rest, cover them with a damp cloth.
