Chinese Pork Lettuce Wraps
A snack that simply has no equal. Serve it as an appetizer or an introduction to a more festive meal, or use it to spice up a home party (picnic). If you want to involve your guests in the preparation of the wraps, serve all the ingredients - lettuce leaves, filling, and toppings - in separate bowls, and let their taste and imagination take over the assembly of the wraps.

Sauce

-
3 spoons Water
-
2 spoons Soy sauce, shoyu
-
2 spoons Oyster sauce
-
1 teaspoon Oil, sesame
-
2 spoons Alcohol, Wine, White
-
1 teaspoon Sugar, brown
Steps
-
First, prepare the sauce. Mix the cornstarch in a small bowl with one tablespoon of water. Stir until you get a smooth mixture without lumps. Mix this with soy sauce, oyster sauce, sugar, wine, sesame oil, and two tablespoons of water.
-
Peel the onion, garlic, and ginger, and finely chop them separately. Drain the water chestnuts and corn well and chop them finely. Clean the mushrooms and cut them into small pieces.
-
Heat oil in a wok (or a large pan) and quickly sauté the garlic and ginger. Add the onion and sauté for 1 minute, then add the meat. Stir and continue to fry, and when the meat changes color, add the chopped mushrooms, corn, and water chestnuts to the wok. Keep stirring and fry for another 2 minutes. Pour in the sauce and cook for 1 to 2 minutes until the sauce thickens nicely and coats all the ingredients, then remove the wok from the heat.
-
Separate the lettuce into individual leaves, wash them under running water, and dry them well with paper towels. Clean the green part of the spring onion, wash it, and slice it diagonally. Wash the chili and slice it diagonally as well. Roughly chop the cilantro.
-
Take a lettuce leaf and fill it with the prepared filling. Sprinkle the chili, spring onion, and cilantro over the filling. Repeat the process until you run out of lettuce leaves or filling. Serve the prepared snacks on a plate or platter and serve immediately. Serve with lime wedges on the side.

Advice
The addition of Chinese wine can be omitted or replaced with sherry. You can also sprinkle coarsely ground peanuts over the filling if desired.
