Steps

Thoroughly wash the meat and cut it into strips. Wash the lemon, dry it, and zest it to get the juice, then grate the peel. Mix the juice and peel in a separate bowl with soy sauce, Tabasco, ginger, and crushed garlic. Add the meat to this marinade, cover the bowl, and let it sit for about 30 minutes.

Peel the carrot and slice it thinly. Thoroughly wash both peppers, remove the seeds, and slice them thinly as well. Wash the bean sprouts and drain them. Wash the leek, clean it, and slice it into rings.

Place a wok on the stove and heat two tablespoons of oil. Add the carrot and peppers and stir-fry for about six minutes. Then add the leek and cook for a bit longer.

Place a pan on the stove, heat the remaining oil, and cook the marinated chicken for six minutes, ensuring it is evenly browned on all sides. Mix the meat with the vegetables, add the bean sprouts, broth, and sherry. Cook over moderate heat until the mixture thickens slightly. Stir frequently. Serve the prepared dish on plates.

Advice
Instead of ground ginger, you can also use 20 g of fresh ginger root, peeled and grated. It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
