Chive Pancakes with Ham and Creamy Spread
We bake chive pancakes and fill them with a creamy spread, ham, and tomatoes. The filled pancakes are cut in half, arranged in a baking dish, sprinkled with grated cheese, and baked in the oven. Rinse the chives under running water, shake them well, and chop them into pieces. In a bowl, mix the eggs, milk, salt, a spoonful of oil, and half of the chopped chives. While mixing, gradually add the flour to combine the ingredients into a smooth batter without lumps. Finally, mix in the water. Let the batter rest for 30 minutes before baking. If in a hurry, you can bake the pancakes immediately.

Place a pancake pan on the stove and heat it well. Lightly grease it with oil, then pour in enough batter to thinly cover the bottom. When the pancake is cooked on the bottom side, flip it with a spatula and cook the other side. Place the cooked pancake on a warmed plate. From the entire batter, bake 6 to 8 pancakes. Grease the pan with oil as needed.

Grate the cheese. Mix the sour cream with the remaining chives and 2/3 of the grated cheese. Season the mixture to taste with pepper, salt, and ground nutmeg. Wash the tomatoes and slice them, removing the seeds.

Preheat the oven to 190°C. Take a pancake and first spread it with the creamy mixture, then top it with a slice of ham and a few tomato slices. Roll it up and cut it in half. Repeat the process until all the pancakes are filled and rolled.

Arrange the halved filled pancakes in a baking dish (with the cut side facing up). Sprinkle the remaining cheese on top, then quickly bake the pancakes in the oven preheated to 190°C. When the cheese melts and turns golden brown, they are ready to serve. Offer with a bowl of your favorite salad or a plate of soup.
