Chive Soup

Ingredients

6 pieces Potatoes, white

1 l Soup base, chicken, cube

1 pinch Spices, nutmeg, ground

1 bouquet Garlic, fresh

1 pinch Salt, table

1 pinch Spices, pepper, black
Steps

Peel the potatoes, wash them, and cut them into smaller cubes. Place the potatoes in a larger pot and add enough water to cover them. Salt the water, bring it to a boil, and cook over moderate heat for another 10 minutes or until the potatoes are soft (check with a long, thin knife). Drain the cooked potatoes. Wash the chives and finely chop them.

Bring the soup base to a boil in the pot, add the potatoes and most of the chives (save some for garnish), and mix everything well. Reduce the heat and cook the soup for another 5 minutes. Then remove from heat and blend until smooth using an immersion blender. Season with salt, pepper, and nutmeg, and serve warm. Garnish the soup with the reserved chive leaves on top.
