Ingredients
-
2 piece Banana, fresh
-
1 piece Egg, fresh
-
115 g Butter, unsalted
-
80 ml Milk, whole milk
-
120 g Sugar, white
-
120 g Wheat flour, white, multi-purpose
-
110 g Flour, Whole wheat
-
1.5 teaspoons Baking powder
-
0.5 teaspoons Baking powder
-
0.25 teaspoons Salt, table
-
120 g chocolate, dark
Steps
-
Preheat the oven to 180°C. Grease the muffin tin with butter (or line it with paper liners). In a small saucepan, melt the butter over low heat, then let it cool slightly. In a bowl, mix the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
-
Peel the bananas and slice them into rounds, then place them in a bowl. Mash the banana slices well with a fork. Then add the egg, melted butter, sugar, and milk to the bowl. Mix the ingredients well with a hand whisk. Add the dry ingredient mixture to the wet mixture and stir with a spatula just enough to moisten and combine all the ingredients. Finally, fold in the chocolate chunks.
-
Fill the muffin tin cavities about 2/3 full with the prepared batter. Bake the muffins in the preheated oven on the middle rack for 20 to 25 minutes, or until they turn golden brown. To check if the muffins are done, insert a toothpick into one – if it comes out clean, the muffin is baked.
-
Remove the baked muffins from the oven and let them rest for about 5 minutes. Then take them out of the tin, place them on a wire rack, and let them cool completely.

Advice
The batter can be flavored with 0.5 tsp of vanilla extract, 0.5 tsp of ground cinnamon, or 1 tbsp of rum. Optionally, you can also mix in roughly chopped walnuts (100 g) into the muffin batter, which should be toasted in a preheated oven beforehand (about 8 minutes at 180°C).
