Ingredients

Steps

Grease a deep and narrow rectangular baking pan (approximately 26 cm long) well with butter and dust it with cocoa powder. Preheat the oven to 190 degrees Celsius and set the rack to the middle height. Melt the butter in a cup. Remove the cup with the melted butter and let it cool slightly. Finely grate the chocolate.

Separate the egg whites and yolks into two bowls. Whisk the yolks with half of the sugar until frothy using an electric mixer. Beat the egg whites with the remaining sugar until stiff peaks form. Gently fold a quarter of the egg whites into the yolk mixture using a hand whisk (you can also use a spoon).

Add the sifted flour, grated chocolate, cinnamon, orange zest, vanilla extract, almonds, melted butter, and the remaining egg whites, and gently and slowly mix everything together into a batter.

Pour the prepared batter into the greased baking pan and smooth the surface. Place the pan in the preheated oven for 40 to 50 minutes.

Remove the pan from the oven and let the chocolate bread cool. Transfer the cooled bread to a rectangular serving plate.

Coarsely chop the chocolate for the glaze and melt it in a water bath (see tips). Pour the melted chocolate over the cooled cake. Serve the prepared dessert.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof container with the ingredients over another container with hot water and whisk the ingredients in the upper container until they thicken and froth. The water in the lower container should not boil vigorously! It is best to use organic oranges, whose peel is not treated with pesticides. If organic oranges are not available, immerse the orange in boiling water for a few minutes, then wipe it well to remove the wax, which contains toxins.
