Chocolate Cake with Metlika Red Wine

Ingredients

240 g Butter, unsalted

250 g Powdered sugar

5 pieces Egg, fresh

250 g Wheat flour, white, multi-purpose

35 g Cocoa, powdered, unsweetened

10 g Baking powder

200 g chocolate, dark

1 dl Water

100 g Sugar, white

4 dl Alcohol, Wine, Red

Cream the butter and powdered sugar with an electric mixer. Gradually (one by one) add the eggs (each egg should be mixed in for about half a minute). Once all the eggs are incorporated into the batter, mix in 180 ml of Metlika red wine. In a separate bowl, mix the dry ingredients (flour, sifted cocoa, chocolate chips, and baking powder). First, add half of the dry ingredient mixture to the egg mixture and mix well on low speed. Repeat the process with the remaining half.

Preheat the oven to 160°C. Grease the cake pan well with butter and pour the prepared batter into it. Gently shake the pan to evenly distribute the batter and smooth the top. Bake the cake in the preheated oven for 10 minutes, then reduce the temperature to 140°C and bake for an additional 35 minutes.

While the cake is baking, prepare the liquid to pour over the baked cake. In a small pot, mix water, sugar, and the remaining wine (220 ml). Bring the mixture to a boil, and once the sugar is completely dissolved, remove the pot from the heat and let the "wine syrup" cool slightly.

Take the baked cake out of the oven and while still hot, soak it with the prepared liquid. Wait for the cake to absorb all the liquid, then remove it from the pan, let it cool, and enjoy the harmonious blend of chocolate and wine flavors.
