Chocolate Cake with Pears
Pears and chocolate make an excellent combination. If you add ground hazelnuts, the pleasure is even greater. The final result is a delicious and juicy dessert that can be served with a cup of hot or cold beverage.

1 spoon Butter, unsalted

1 spoon Cocoa, powdered, unsweetened

90 g chocolate, dark

Steps

Line the bottom of a round cake pan with a removable rim (25 cm in diameter) with parchment paper, then generously grease the bottom and sides of the pan with butter. Dust the greased pan with cocoa powder (remove any excess cocoa). Preheat the oven to 180 degrees Celsius.

Place a smaller pot with about half a liter of water on the stove. Place a heatproof bowl on top and break the chocolate into it. Make sure the bottom of the bowl does not touch the water in the pot. Add a pinch of salt and the butter, cut into pieces, to the bowl with the chocolate. Slowly melt the chocolate and butter over the water bath. Once the chocolate has melted, remove the bowl from the heat, add the brandy, and gently whisk until you have a smooth chocolate mixture.

In another bowl, use an electric mixer to beat the eggs and sugar until frothy. First, mix the cooled chocolate mixture into the egg mixture, then add the ground hazelnuts.

Wash and peel the pears. Cut them into quarters and remove the stems and cores. Cut the pear quarters into smaller pieces and gently fold them into the batter.

Use a spoon or spatula to evenly spread the prepared batter into the pan and smooth the top. Place the pan in the preheated oven for 30 to 40 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Let the baked cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely. Once cooled, dust the cake with powdered sugar and cut it into desired-sized pieces. Serve on plates with whipped cream.

Advice
You can roast the hazelnuts in the oven beforehand, peel them, and then finely grind them. A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with the ingredients over another bowl with hot water. The water in the lower bowl should not boil vigorously!
