Chocolate Cake with Persimmon

Preheat the oven to 180 degrees Celsius. Sift the flour, cocoa powder, and baking powder into a bowl. Mix the sifted ingredients well. Chop the chocolate into pieces.

Separate the egg whites and yolks into two bowls. Whisk the yolks together with sugar and softened butter until frothy. First, mix in the persimmon puree, then add the mixture of dry ingredients. Beat the egg whites with a pinch of salt into stiff peaks, which you gently and slowly fold into the batter in two or three batches using a hand whisk. Finally, fold in the chocolate pieces.

Grease a round baking pan with butter and dust it with cocoa powder (remove any excess cocoa). Pour the prepared batter into the pan. Wash the persimmon and dry it well with a paper towel. Slice it into chunks and arrange them nicely over the batter. Place the pan in the preheated oven for 50 to 60 minutes. The cake is done when a skewer inserted into the batter comes out clean.

Let the baked cake cool in the pan for a few minutes, then transfer it to a wire rack and let it cool completely. Once cooled, dust it with powdered sugar, slice into pieces, and serve.
