Chocolate Cake with Red Currants
For many, it will be more than delightful news that we don’t need flour to prepare this chocolate cake. The addition of whipped cream pleasantly refreshes the cake, while the small red currant berries add the perfect finishing touch. Sounds heavenly, doesn’t it?

Ingredients

120 g chocolate, dark

120 g Butter, unsalted

1 pinch Salt, table

3 pieces Egg, fresh

100 g Powdered sugar

60 g Cocoa, powdered, unsweetened

300 ml Sweet cream

200 g Red currant, fresh
Steps

Preheat the oven to 180 degrees Celsius. Sift the cocoa powder into a small bowl. Grease a round cake pan (20 cm in diameter) well with butter and dust it with a bit of cocoa powder. Break (or cut) the chocolate into smaller pieces. Also, cut the butter into smaller pieces.

Place a small pot on the stove and fill it with water up to 1/3 of its height. Place a heatproof bowl on top, making sure the bottom of the bowl does not touch the water in the pot. Add the butter and chocolate pieces to the bowl and melt them over the water bath. Once the butter and chocolate have melted, add the salt. Mix everything well and remove the bowl from the heat.

In a larger bowl, crack the eggs and whisk them together with the sugar using an electric mixer until frothy. Add the cooled melted chocolate and mix everything on medium speed until all the ingredients are well combined. Finally, mix in the remaining cocoa powder.

Pour the prepared batter into the prepared cake pan. Bake in the preheated oven for 25 to 30 minutes. Once baked, remove the cake from the oven and let it cool completely.

Whip the cream using an electric mixer. Wash and clean the red currants as needed. Carefully remove the cooled cake from the pan and place it on a serving plate. Spread the whipped cream over the top and decorate with red currants. Cut the cake into smaller pieces, serve on plates, and enjoy.
