Chocolate Cakes with Tahini
Tahini is a sesame paste commonly used in Mediterranean cuisine. It is almost an indispensable addition to hummus (a chickpea spread) and is also used in dressings and sauces. This time, tahini will be one of the main ingredients in delicious chocolate cakes.

150 g Butter, unsalted

30 g Cocoa, powdered, unsweetened

60 g Wheat flour, white, multi-purpose

1 pinch Salt, table

165 g chocolate, dark

100 g Sesame butter, tahini

Steps

Preheat the oven to 180 degrees Celsius. Grease six heat-resistant round molds (120 ml capacity) with butter, then dust them with cocoa powder (remove any excess cocoa).

Sift the remaining cocoa, flour, and salt into a bowl. Mix the ingredients well. In a saucepan over low heat, slowly melt the chocolate and the remaining butter (be careful not to burn the chocolate). Once the chocolate has melted, remove the saucepan from the heat and gently but thoroughly mix to create a smooth chocolate mixture.

Beat the eggs and sugar with an electric mixer for 5 minutes until you get a light, fluffy, pale yellow mixture. Add a few tablespoons of the beaten eggs to the tahini to loosen it up, then gently and slowly mix this into the beaten eggs. Next, mix the cooled chocolate into the egg mixture, and finally, add the dry ingredients.

Fill the greased molds with the prepared batter and place them on a large baking tray. Bake the cakes in the preheated oven for 12 to 14 minutes. They are done when the outside is nicely baked, but the inside is still moist. Let the baked cakes cool for 20 minutes before serving.

Turn the cooled cakes onto plates, dust with powdered sugar, and serve with fresh fruit, whipped cream, or a scoop of ice cream.
