Chocolate Cheesecake with Mascarpone
If you avoid baking cakes because youre afraid the sponge wont turn out well, this recipe is perfect for you. The base of the cake is made from crushed biscuits and melted butter, while the cream is made from melted chocolate, mascarpone, and cream cheese spread. No eggs, no oven, and minimal effort!

Ingredients
Cream

130 g chocolate, dark

2 spoons Sweet cream

225 g Cheese, creamy

90 g Powdered sugar

1 teaspoon Vanilla, extract, imitation

300 g Breadcrumbs, dried

130 g Butter, unsalted
Steps

Slowly melt the butter in a small pot over low heat, and finely grind the biscuits in a food processor. Mix the ground biscuits, sugar, and melted butter together.

Lightly grease the bottom of a round springform pan (23 cm in diameter) with butter and line it with baking paper. Pour the biscuit mixture into the pan and press it firmly with your hands to create an even biscuit base. Chill it well in the refrigerator.

Coarsely chop the chocolate. Melt it together with the sweet cream in a water bath (see advice). Let the melted chocolate cool until lukewarm.

Mix the mascarpone, sugar, and cream cheese spread smoothly with an electric mixer set to the lowest speed. Add the melted chocolate and vanilla extract, and mix until you get a uniform cream. Pour the cream onto the chilled biscuit base. Smooth the top of the cream, then refrigerate the cake for at least 5 hours (preferably overnight) to allow the cream to cool and set.

Carefully remove the chilled cake from the pan and place it on a cake plate. Decorate it with grated chocolate, cut into desired slices, and serve.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place the heatproof container with the ingredients on top of another container with hot water. Make sure the bottom of the container does not touch the water, and the water should not boil vigorously during melting!
