Ingredients
Dough
-
500 g Breadcrumbs, dried
-
100 g Powdered sugar
-
3 spoons Alcohol, Rum
-
80 g chocolate, dark
-
40 g Cocoa, powdered, unsweetened
-
pieces Milk, whole milk
Filling
-
200 g Margarine
-
100 g Powdered sugar
-
200 g Coconut, flakes
Steps
-
Finely grind the biscuits in a food processor. Transfer the ground biscuits to a larger bowl and mix them with chocolate, cocoa powder, powdered sugar, and rum. Slowly pour in warm milk. Knead until you get a compact dough that doesn't stick to your fingers. Store the dough in the refrigerator until ready to use.
-
Cream the margarine and powdered sugar until fluffy. Mix in the coconut flour.
-
Place a larger piece of parchment paper on the work surface and roll out the dough into an even rectangle (about 0.5 cm thick). Spread the coconut filling over the dough, then carefully roll it up using the parchment paper. Wrap the roll in plastic wrap and refrigerate for at least 3 hours (preferably overnight) to cool and firm up.
-
Take the chilled roll out of the refrigerator and carefully remove the plastic wrap. Slice it into desired thicknesses, arrange on a nice plate or platter, and serve.
