Ingredients
-
230 g chocolate, dark
-
3 pieces Egg, egg yolk, fresh
-
6 spoon Sugar, white
-
2 teaspoons Coffee, espresso
-
450 ml Sweet cream
Steps
-
Break or chop the chocolate into pieces and melt it in a double boiler. You can also heat it in short intervals in the microwave. Once the chocolate is melted, gently stir it to obtain a completely smooth chocolate mixture.
-
Pour 200 ml of sweet cream into a cup. Add espresso powder, four tablespoons of sugar, and egg yolks. Mix the ingredients well with a hand whisk. Place it on the stove and heat the mixture while continuously stirring with a spatula until you get a smooth cream with a beautiful dark caramel color.
-
Mix the caramel cream with the melted chocolate. Once you have a completely smooth and uniform mixture, stop stirring. Cover the cream with plastic wrap, touching the surface, and let it cool completely.
-
Whip the remaining cream (250 ml) until stiff and add the remaining sugar while whipping.
-
First, mix the cooled cream well, then gently fold in the whipped cream. Reserve about three tablespoons of whipped cream for decoration.
-
Distribute the prepared mousse into serving glasses and refrigerate for at least one hour.
-
When ready to serve, decorate the mousse with the reserved whipped cream. Optionally, garnish with cocoa, grated chocolate, chocolate pearls, etc.
