Chocolate Cookies with Mint Butter

In a bowl, mix the flour, baking powder, and chocolate chunks. In another bowl, cream the butter and both types of sugar. Separately, beat the egg and slowly mix it into the butter mixture. Finally, add the flour, baking powder, and chocolate mixture to the dough. Mix all ingredients well to form a uniform dough.

Shape the dough into a long roll, approximately 6 cm thick, wrap it in plastic wrap, and refrigerate for two hours.

Preheat the oven to 140 degrees Celsius. Line a low baking tray with parchment paper. Unwrap the chilled roll and slice it into 1 cm thick cookies, arranging them on the tray. Leave some space between the cookies as they will expand slightly during baking. Bake the cookies in the preheated oven for 20 minutes.

Once the cookies are nicely browned, remove them from the oven and let them cool on a wire rack.
