Chocolate-Cottage Cheese Pastry
An excellent pastry with an interesting preparation process. The crumbly dough is easily grated onto the baking dish, with a layer of rich cottage cheese cream spread in between. Without hesitation, we can say this is divinely delicious!

Ingredients
Dough

400 g Wheat flour, white, multi-purpose

150 g Powdered sugar

0.5 bags Baking powder

3 spoons Cocoa, powdered, unsweetened

1 pinch Salt, table

250 g Butter, unsalted

2 piece Egg, egg yolk, fresh
Filling

1 kg Cheese, cottage cheese

3 pieces Egg, fresh

1 piece Egg, egg white, fresh

200 g Sugar, white

Steps

In a bowl, sift together the flour, cocoa powder, baking powder, and powdered sugar. Add salt, mix, and then sprinkle the mixture with diced butter. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolk and quickly knead the ingredients with cold hands into a dough, shape it into a ball, wrap it in plastic wrap, and store it in the freezer for 30 minutes. If the dough is too dry to knead together, add a few tablespoons of cold water or milk.

While the dough rests, prepare the filling. Place the cottage cheese in a bowl and break it into smaller pieces with a fork. Separate the egg yolks and whites into two bowls. Add a pinch of salt to the egg whites and beat them with an electric mixer until stiff peaks form. Gradually (by the spoonful) add 150 g of sugar while continuously mixing, and beat until you get a thick and glossy meringue. Whisk the egg yolks with the remaining sugar until frothy.

Mix the cottage cheese with the egg yolk mixture, lemon zest, and orange zest. Gently and slowly fold the egg white meringue into the mixture in two or three batches using a hand whisk.

Preheat the oven to 200°C. Lightly grease a deep rectangular baking dish (25 x 35 cm) with butter and line it with baking paper. Take half of the dough and grate it into the prepared baking dish. If necessary, spread the dough evenly with your hands. Spread the cottage cheese filling evenly over the dough. Grate the remaining dough over the filling. Place the baking dish in the preheated oven. Bake the pastry for 10 minutes, then reduce the oven temperature to 180°C and bake for another 45 minutes. Let the baked pastry cool in the dish.

Once cooled, cut the pastry into smaller pieces, serve on a nice plate or platter, and enjoy.
