Ingredients
-
180 g chocolate, dark
-
2 spoons Juice, orange
-
2.5 spoons Water
-
2 spoons Butter, unsalted
-
2 piece Egg, fresh
-
2 pinch Baking powder
-
2 spoons Sugar, white
-
6 spoon Sweet cream
Steps
-
Break the chocolate into smaller pieces and place them in a small pot with a thick bottom. Add water and orange juice to the pot, then slowly heat the mixture over moderate heat until the chocolate melts. Stir continuously while heating. Once the chocolate is completely melted, remove the pot from the heat and mix in the chopped butter. Stir until the butter melts, then pour the mixture into a larger bowl.
-
Separate the egg whites and yolks into two bowls. Whisk the yolks with an electric mixer until frothy. Fold the whisked yolks into the cooled chocolate mixture. Add cream of tartar to the egg whites and beat them into stiff peaks. Gradually add sugar to the egg whites while beating. First, mix one spoonful of the egg white foam into the chocolate-yolk mixture, then gently fold in the remaining foam.
-
Whip the sweet cream, but do not overbeat it. Fold the whipped cream into the chocolate mixture. Fill a piping bag with the prepared chocolate cream and pipe it into small bowls. Refrigerate the bowls with the chocolate cream for at least 4 hours.
-
At the appropriate time, take the bowls of chocolate cream out of the refrigerator and serve to your guests.
