Ingredients
-
400 g Cooking chocolate, unsweetened
-
250 g Sweet cream
-
4 pieces Egg, fresh
-
6 spoon Alcohol, Coffee liqueur
-
100 ml Sweet cream
-
1 teaspoon Sugar, white
Steps
-
Break or chop the chocolate into smaller pieces. Prepare a water bath. Place a larger pot with water on the stove. There should be enough water to reach about 4 fingers high. Heat the water in the pot strongly, but it should not boil! Place a heatproof bowl on top of the pot with hot water and add the chocolate pieces to the bowl (see tips). Melt the chocolate while stirring occasionally.
-
Once the chocolate has melted, pour the cream into the bowl. While continuously stirring, gradually add the egg yolks one by one. Finally, mix in the coffee liqueur. Remove the bowl from the heat and let the mixture cool.
-
Beat the egg whites into stiff peaks. Gently fold the egg whites into the chocolate mixture in batches (using a spoon or a hand whisk).
-
Fill small bowls (or glasses) with the chocolate cream and cover them with transparent foil. Place the bowls in the refrigerator for at least two hours to allow the cream to cool well.
-
Whip the sweet cream (100 ml) together with a spoonful of sugar. Take the bowls with the cream out of the refrigerator and remove the transparent foil. Decorate the cream with the whipped cream and serve the prepared dessert.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with the ingredients on top of another bowl with hot water and whisk the ingredients in the upper bowl until they thicken and foam. The water in the lower bowl should not boil vigorously!
