Chocolate-Date Slices with Chocolate Sauce
Its true that the sponge cake doesnt contain butter or white sugar. However, due to the large amount of brown sugar and dates, this is certainly not a dessert you could indulge in every day.

Ingredients

300 g Date, fresh or dried

6 pieces Egg, fresh

150 g Sugar, brown

200 g Flour, Whole wheat

2 teaspoons Baking powder

100 g Cocoa, powdered, unsweetened

1 pinch Salt, table

350 ml Sweet cream

50 g Butter, unsalted

1 spoon Sugar, white

200 g chocolate, dark
Steps

Coarsely chop the dates, place them in a bowl, pour boiling water over them, and let them sit for 30 minutes.

Preheat the oven to 160 degrees Celsius. Line a deep rectangular baking dish (20 x 30 cm) with baking paper. Drain the soaked dates and reserve the soaking liquid. Place the dates in a food processor and blend them with 100 ml of the reserved liquid until smooth.

Separate the egg whites and yolks into two bowls. First, beat the egg whites with an electric mixer until stiff peaks form. Then add half of the sugar and continue beating until you get a glossy meringue.

Mix the egg yolks with the other half of the sugar until you get a light, pale yellow cream. Mix in the blended dates. Then, gently and slowly (preferably with a hand whisk) fold the meringue into the mixture in two or three parts.

In a bowl, mix the flour, salt, baking powder, and cocoa powder. Sift the dry ingredients into the bowl with the egg-date mixture. Gently and slowly fold the dry ingredients into the mixture. Mix until you get a smooth batter without lumps.

Pour the batter into the prepared baking dish. Spread it evenly and smooth the top. Place the dish in the preheated oven for 35 to 40 minutes. The sponge cake is done when a skewer inserted into the center comes out clean.

Remove the baked sponge cake from the oven and let it cool in the dish.

While the cake is cooling, prepare the chocolate sauce. Place a saucepan with cream, butter, and sugar on the stove. Chop or break the chocolate into smaller pieces and add them to the saucepan. Heat the ingredients over moderate heat, stirring slowly until you get a smooth chocolate mixture. Let the chocolate sauce cool slightly.

Cut the cooled sponge cake into slices of your desired size, serve on plates, pour the warm sauce over them, and enjoy.
