Chocolate Fantasy
The recipe is by Tilen Deško, who competed for the win in the second season of the show Gostilna išče šefa. He was eliminated in the fourth round. Tilens big dream is to open a restaurant where he can spoil guests with his specialties. He shared with us the recipe for one of them - an outrageously good chocolate lava cake.

Ingredients

300 g chocolate, dark

300 g Butter, unsalted

10 pieces Egg, fresh

166 g Sugar, white

280 g Wheat flour, white, multi-purpose

Break the chocolate into smaller pieces and cut the butter into small cubes (so it melts faster). Place the butter and chocolate pieces in a glass or metal bowl and set it over a water bath. Heat the butter and chocolate over steam until a smooth chocolate mixture forms.

Separate the egg yolks and whites into two bowls. Add sugar to the bowl with the yolks and whisk until frothy. Mix the flour into the beaten yolks. Beat the egg whites until stiff peaks form. Let the melted chocolate and butter cool slightly, then mix in the yolks. Combine everything well and gently fold in the beaten egg whites with a hand whisk (do not beat). Optionally, you can add grated zest (orange, lemon, or grapefruit), rum, or various flavorings (aromas).

Pour the chocolate mixture into greased ramekins and bake at 200 degrees Celsius for 5 to 8 minutes (depending on how well-done you want the cakes). The baking time also depends on the size of the ramekins.
