Ingredients
-
pieces Butter, unsalted
-
200 g Nuts, hazelnuts, roasted without oil, without salt
-
250 g chocolate, dark
-
180 g Butter, unsalted
-
40 g Cocoa, powdered, unsweetened
-
60 ml Coffee, espresso
-
6 pieces Egg, fresh
-
220 g Sugar, white
-
pieces Cocoa, powdered, unsweetened
-
pieces Sweet cream
Steps
-
Preheat the oven to 180 degrees Celsius. Grease a round springform pan (22 cm in diameter) with butter and line the bottom with parchment paper. Finely grind the hazelnuts.
-
Break or chop the chocolate into pieces and place them in a heatproof bowl along with the butter and cocoa powder. Melt the ingredients slowly over a double boiler (make sure the bottom of the bowl does not touch the water in the pot!). Stir gently several times during melting, and once you have a completely smooth chocolate mixture, remove the bowl from the heat and stir in the coffee.
-
Beat the eggs and sugar with an electric mixer until frothy. First, mix the cooled chocolate mixture into the egg mixture, then add the ground hazelnuts. Pour the batter into the greased pan and bake in the preheated oven for 45 to 50 minutes. The cake is done when the center is still slightly soft to the touch. Remove the baked cake from the oven and let it cool completely in the pan, placed on a wire rack.
-
Carefully remove the cooled cake from the pan. Place it on a nice plate or platter and dust the top with cocoa powder or powdered sugar. Cut it into slices of any size, serve on plates, garnish with whipped cream, and enjoy.

Advice
You can also roast the hazelnuts yourself. Spread them in a single layer on a shallow baking tray and bake in a preheated oven at 200 degrees Celsius for 10 minutes. Halfway through baking, stir them well to ensure even roasting. Transfer the roasted hazelnuts to one half of a clean kitchen towel. Cover them with the other half of the towel and gently roll them with your hands until all the brown skins are removed.
