Chocolate Hazelnut Napolitanke

Ingredients

3 pieces Cone, waffle

3 pieces Egg, fresh

130 g Sugar, white

150 g Butter, unsalted

150 g chocolate, dark

150 g Breadcrumbs, dried

150 g Nuts, hazelnuts
Steps

Fill a large pot up to 1/3 with hot water and place it on the stove. In a heatproof bowl, add the eggs and sugar, and whisk them with an electric mixer until frothy. Place the bowl with the whisked eggs over the pot and cook in a water bath, stirring constantly, until the egg cream thickens slightly. Make sure the bottom of the bowl does not touch the water in the pot.

Melt the chocolate and butter (in the microwave or in a small pot on the stove), let it cool slightly, and then mix it into the egg cream. Continue cooking the cream in the water bath for another 4 to 5 minutes while stirring.

Remove the bowl with the cream from the heat and mix in the ground cookies and hazelnuts. Let the cream cool to room temperature.

Take one wafer and spread half of the prepared cream evenly over it. Carefully place a second wafer on top of the cream and spread the remaining cream over it. Place a third wafer on top. Weigh down the dessert (for example, with a cookbook) to prevent the edges from curling and place it in the refrigerator for two and a half hours.

Once cooled, cut the dessert into smaller pieces (triangles, cubes, rectangles), serve them on a plate, and enjoy.
