Chocolate Mousse with Meringues
Chocolate mousse is a light and creamy chocolate dessert that can be prepared without turning on the oven. Because the preparation is so simple, it is also suitable for moments when unexpected guests surprise us.

Ingredients

120 g chocolate, dark

30 g Butter, unsalted

1 pinch Salt, table

2 piece Egg, fresh

60 g Sugar, white

0.5 teaspoons Vanilla, extract, imitation

120 ml Sweet cream

6 pieces Egg, egg white, fresh
Steps

Coarsely chop the chocolate and place it in a heatproof bowl, then add the butter cut into smaller pieces and salt. Place the bowl over a pot of boiling water and slowly melt the chocolate using the water bath method (see tips). Once the chocolate has melted, remove the bowl from the heat and mix the chocolate well. Let it cool to room temperature.

Crack the eggs and separate the whites and yolks into two bowls. Whisk the yolks with an electric mixer until frothy. Beat the egg whites with half of the sugar until the mixture is shiny, firm, but still slightly runny. Whip the cream with vanilla aroma and the remaining sugar to the same consistency.

First, mix the yolks into the cooled melted chocolate, then gradually fold in the egg whites. Add the egg whites in stages; first 1/3, then the remaining 2/3. Finally, slowly fold in the whipped cream. Crumble half of the meringues by hand over the chocolate mixture and gently mix everything together.

Distribute the prepared chocolate mixture into glasses and refrigerate for at least one hour to allow the dessert to cool and set.

Crumble the remaining meringues by hand into a bowl. Sprinkle a little of the crumbled meringues over the top of the chilled dessert and serve.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with the ingredients on top of another bowl with hot water and whisk the ingredients in the upper bowl until they thicken and froth. The water in the lower bowl should not boil vigorously!
