Chocolate Mousse with Strawberries
There are countless chocolate mousse recipes online, but one with sweet potatoes is likely something you havent tried yet. Combined with dates, chocolate, and strawberries, it is truly divine and delicious. It will also appeal to those who dont like vegetables, making it a great way to incorporate more vegetables and nutrients into your diet.

Ingredients

2 piece Sweet potato

10 pieces Date, fresh or dried

1 spoon Syrup, maple

3 spoons Cocoa, powdered, unsweetened

1 spoon Flaxseed

120 ml Coconut milk

1 teaspoon Vanilla, extract, natural

1 pinch Spices, cinnamon, ground

1 pinch Salt, table

40 g chocolate, dark

Wash the sweet potatoes and cut them in half lengthwise. Pierce both sides with a fork and bake in an air fryer (25-30 minutes) or in the oven (40-45 minutes) at 185 degrees Celsius.

While the potatoes are baking, soak the dates in hot water for at least 30 minutes. You can also soak them overnight.

Once the potatoes are baked, let them cool slightly, then peel them.

In a blender, add all the ingredients for the mousse, except the chocolate, and blend until smooth. Melt the chocolate (using a double boiler or microwave) and add it to the mixture, then mix everything together well. Taste the cream and add more syrup if desired.

Quickly rinse the strawberries under running water, dry them, and cut them into smaller pieces.

Serve the mousse in any glass (or bowl) and top it with the chopped strawberries. You can also use freeze-dried strawberries if desired.
