Chocolate Muffins with Chocolate Cream

80 g chocolate, dark

40 g Butter, unsalted

225 g Powdered sugar

75 g Butter, unsalted

Steps

Preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin (or grease them with butter). Break (or chop) the chocolate into smaller pieces. Place a smaller pot on the stove and fill it with water up to 1/3. Place a heatproof bowl on top, making sure the bottom of the bowl does not touch the water in the pot. Add the chocolate pieces and butter to the bowl, then melt them over the water bath. Once the butter and chocolate have melted, mix them well and remove the bowl from the heat.

In a bowl, mix the flour, cocoa powder, sugar, baking powder, and baking soda. In another bowl, whisk together the eggs and milk. Pour the egg mixture into the bowl with the dry ingredients and mix with a hand whisk or spoon just enough to moisten all the ingredients. Stir in the melted chocolate.

Fill the muffin tin cavities with the batter up to 3/4. Bake the muffins in the preheated oven on the middle rack for 20 to 25 minutes, until they turn golden brown. Remove the baked muffins from the oven, let them rest for 10 minutes, then take them out of the tin and let them cool.

While the muffins are baking, prepare the chocolate buttercream to decorate the muffins.

Fill a piping bag with the chocolate buttercream. Use a star-shaped nozzle and decorate the cooled muffins with the chocolate cream. Optionally, decorate the muffins with any sugar decorations of your choice.
