Chocolate Pancakes with Cream and Cherries

Ingredients

200 g Flour, Wheat, bread flour

50 g Cocoa, powdered, unsweetened

4 dl Milk, whole milk

150 ml Water

First, prepare the pancake batter. Sift the flour and cocoa powder into a bowl. Mix the sifted ingredients well.

In another bowl, beat the eggs. Add salt, sugar, milk, and oil, and mix the ingredients well with an electric mixer or a hand whisk. Then, gradually mix in the flour and cocoa mixture into the egg mixture. You should get a completely smooth batter without lumps, which you let rest for 15-20 minutes so that the flour grains can swell. Just before you start baking the pancakes, mix in the mineral water.

Pour a little oil into a preheated pancake pan and spread it over the entire surface by tilting the pan (pour any excess oil back into a container). Pour enough batter into the greased pan with a ladle to thinly cover the bottom. When the pancake is cooked on the bottom side, flip it with a spatula and cook the other side. Be a bit careful when cooking, as the pancake is brown due to the cocoa and can easily be overcooked. Place the cooked pancake on a warmed plate and cover it to keep it warm. Repeat the process until you run out of batter.

Whip the sweet cream together with powdered sugar until soft white peaks form (be careful not to over-whip it).

Spread a little whipped cream on the baked pancakes, then top with drained cherries. Fold or roll the pancakes as desired and serve them on a large plate or platter. Dust them with powdered sugar and serve the dessert immediately.
