Chocolate Pancakes with Topping

Ingredients
Dressing

90 g chocolate, dark

120 ml Sweet cream

Steps

Sift the dry ingredients (flour, cocoa, baking powder) into a bowl. Add salt and mix everything well.

In another bowl, use an electric mixer to beat the eggs and sugar until frothy. Add the milk and melted butter and mix until you get a smooth liquid mixture.

Make a well in the center of the dry ingredients and pour in the egg mixture. Then mix the ingredients well to get a uniform mass. If it seems too thick, add 1-2 tablespoons of milk, and if it is too runny, add 1-2 tablespoons of flour.

Heat a pancake pan over medium heat. Grease it with a piece of butter, then pour about 60 milliliters of batter into the pan using a ladle, but do not spread it out; instead, form a smaller and thicker pancake (the diameter of the pancake should be between 10 and 12 cm). Cook the pancake over medium heat, and when the bottom side is cooked and small bubbles appear on the top side, carefully flip it with a spatula and cook the other side. Repeat the process until all the batter is used. If you have a larger pan, you can cook several pancakes at the same time.

While cooking the pancakes, prepare the chocolate sauce. Heat the cream in a small saucepan and remove it from the heat just before it boils (when it reaches 90 degrees Celsius). Add the chopped chocolate. Wait for 1 minute, then gently stir with a spatula until you get a completely smooth chocolate mixture.

Stack the cooked pancakes on plates and pour the chocolate sauce over them. Decorate with chopped nuts or fruit and serve the prepared dessert immediately.

If we want the pancakes to be even lighter and fluffier, we separate the eggs into yolks and whites at the beginning of preparation - mix the yolks with milk and melted butter, and beat the whites into stiff peaks, which we gently and slowly fold into the batter in two or three parts.
